Dianes Fabulous Cajun Pralines
Ingredients:
4 cups sugar
3/4 stick butter
2 Tbsp Light Karo Syrup
1 cup Milk
dash salt (unless using peanuts)
1 tsp vanilla
2-5 cups nuts (pecans quarters or peanuts)
red food coloring (about 1 drop) (optional)
Directions:
Melt butter and add all ingredients except vanilla and nuts. Cook
over medium heat until the mixture begins to boil. Reduce heat and
cook for 15-20 minutes with constant stirring until drops just form a
soft ball in cold water. Place pan in cold water add nuts and vanilla
and food coloring. The color should be a light pink.
Stir until mixture begins to thicken. Spoon onto wax paper in 1 to 2 Tbsp
mounds. Allow to cool, hide from Mitzi. Store in a sealed container.
Note: We have great success using 3 cups of pecan quarters. They help hold
the candy together. Also, because of allergies, we use no food coloring>
