CINNAMON APPLE CAKE
(From the kitchen of Patty Pridemore)
Ingredients:
1 3/4 Cups granulated sugar
1/2 Cup softened margarine
1 tsp vanilla extract
6 ozs fat free cream cheese
2 large eggs
1 1/2 cups all-purpose flour
1 1/2 tsps baking powder
1/4 tsp salt
2 tsps ground cinnamon
3 cups peeled, chopped apples (Rome 2 large)
Cooking Spray
Preheat oven to 350 degrees.
Beat 1 1/2 cups of sugar, margarine, vanilla, and cream cheese
with mixer at medium speed, until well blended. Add eggs one
at a time, beating well after each addition. Combine flour,
baking powder and salt and add mixture gradually with slow beating.
Combine 1/4 cup sugar and cinnamon. Mix 2 Tbsp of cinnamon mixture
with apples in a separate bowl. Stir apple mixture into batter.
Pour into a cooking spray coated 8 inch spring-form pan. Sprinkle
remaining cinnamon sugar over top. Bake for 75 mins at 350 degrees.
This is an extremely moist cake that is a cross between a coffee cake
and a traditional apple cake.
